VG10 is one of the best Japanese stainless steels, and VG10 (edge) is sandwiched between several different steels on both sides.

Carbon steel is not stainless, so it rusts. But it is sharper than stainless steel and easy to sharpen. And if you care well it works great.

Santoku is the most popular kitchen knife in Japan and it is the most exported Japanese knife to the western market.

Our office is near the seki city that is the largest kitchen knife production city in Japan. However, not only from Seki City, but also we contract with factories and craftsmen in various places , and we purchase top quality kitchen knives throughout Japan.

Those have the highest quality at a price that is not too expensive. Also we have a variety kinds of kitchen knives such as carbon steel knives, stainless steel knives, western style knives, Japanese traditional knives.. etc.

About stainless steel kitchen knife
The advantage of stainless steel kitchen knives is that it is easy to maintain because they do not oxidize easily.

In the past, stainless steel knives were not sharp, but now there are many steels called high carbon stainless steel that are hard and sharp like carbon steel. VG10(from Takehu corp. Japan), Swedish steel and Gingami3 steel(from Hitachi Metals Japan)... etc are the main. These are best-selling knives, and of course professional chefs also use.

About carbon steel kitchen knife
Carbon steel is not stainless, so it rusts. But it is sharper than stainless steel and easy to sharpen. And if you care well it works great. That is why many professional chefs prefer carbon steel kitchen knife.

Most carbon steels are manufactured by Hitachi Metals Ltd. Kigami steel is used for agricultural tools, Shirogami steel is traditionally used for Japanese kitchen knives. And Aogami steel is harder and has higher quality than shirogami steel.
